Why use flavored sugar in a compote?

Cooked fruit naturally develops its sweetness. Flavored sugar helps to:

• to enhance the taste of the fruit without masking it
• to add a soft and balanced fragrance
• Avoid adding liquid vanilla or separate spices.

Ingredients (4 to 6 servings)

• 4 apples (Golden Delicious or Gala)
• 4 ripe pears
• 5 cl of water
• 1 to 2 tablespoons of flavored sugar

Step-by-step preparation

1. Peel the apples and pears, and cut them into pieces.
2. Place them in a saucepan with the water.
3. Cook over low heat for 20 to 25 minutes.
4. When the fruit is very soft, remove from the heat.
5. Add the flavored sugar off the heat .
6. Mix, taste and adjust if necessary.
7. Mixed according to the desired texture (smooth or with pieces).

Which flavors should I choose?

• Vanilla : sweet and timeless
• Lemon : fresh and light
• Tarte tatin : notes of apple and caramel
• Gingerbread : perfect in winter
